These Quick and Easy Lunchbox Quiches are a perfect alternative to a sandwich. Completely adaptable your children will love these quiches!
Ingredients

- 2 sheets of ready rolled shortcrust pastry defrosted
- 2 eggs
- 2/3 cup of grated tasty cheese
- 1/2 cup of cream
- salt & pepper
Filling ideas
- Tomato and spring onion
- Creamed corn and chives
- Bacon, onion and parsley
- Salami, olives and tomatoes
- Mushroom and bacon
- Pumpkin and feta
Instructions
- Preheat oven to 180c and grease a muffin tin well
- Cut 12 circles from the pastry using a glass around 8.5cm in diameter
- Push the pastry into the muffin tins to form the base and sides of the quiche
- Evenly distribute the cheese between the pastry cases and add your desired fillings, season if desired
- In a bowl whisk together the eggs and cream
- Pour the egg mixture evenly between the pastry cases
- Bake for around 12-14 minutes until the custard has set and turned a light golden brown
- Cool for a few minutes in the pan before serving or allow to cool and freeze in a zip lock bag for lunchboxes
Notes
These quiches are freezer friendly. Take them out of the freezer the night before and defrost in the fridge before eating. Consume within two months.
