The Christmas countdown is well and truly on. Our tree is up. Milo, our Elf on the Shelf has arrived. The kids are wearing their Christmas PJs and while I have yet to do any Christmas shopping for the kids, I am getting R.E.A.L.L.Y excited for Christmas.
I truly love everything about it. The shining, excited eyes of kids. The carols. The champagne. The cookies. And this muesli is the perfect Christmas breakfast to enjoy in the lead up to Christmas.
I actually think this Gingerbread Muesli can hold its own and be served Christmas morning as a light but substantial start to the day. You could serve these as Gingerbread Breakfast Parfaits with a thick greek yogurt and fresh raspberries for a beautiful breakfast that’s almost too pretty to eat.
But before you can make the parfaits you will need to make the muesli.
You Will Need
This recipe uses fairly simple pantry ingredients. If you don’t have these they are easy to find in the supermarket. You will need:
- rolled oats
- almonds
- pepitas
- sunflower seeds
- flaxseeds (also known as linseeds)
- ground ginger
- ground cinnamon
- maple syrup
- extra virgin olive oil
To Make the Gingerbread Muesli
Firstly, preheat your oven to 175c on fan-bake and line a baking dish with baking paper. Then add all the ingredients into a medium sized bowl.
Next, stir the mixture well until combined and the oil and maple syrup is evenly distributed.
Then, spread the combined mixture evenly over the lined baking tray. Bake the mixture for 4 minutes then remove from the oven and stir well.
Then continue baking the Gingerbread Muesli for a further 4 minutes. Make sure that you check the muesli as it cooks to make sure it does not burn. When golden brown remove the muesli from the oven and cool completely. Store the muesli in an airtight container for several weeks.
Substitutions
You can easily substitute the almonds for other nuts if you don’t have these. Hazelnuts, walnuts or pecans would be delicious in this Gingerbread Muesli. It would also be delicious to add a mix of these nuts if that was your preference.
If you are allergic to nuts or do not have these on hand you can omit the almonds completely and replace with more oats or seeds. You can also use honey instead of maple syrup or butter to replace the oil.
To Make the Gingerbread Muesli Parfaits
A serving suggestion for this Gingerbread Granola is to make these Gingerbread Muesli Parfaits.
Alternate layers of thick greek yogurt with the Gingerbread Muesli and serve with fresh raspberries for a beautiful breakfast. Alternatively, if you don’t have raspberries you may like to serve with apple or pear puree instead.

- 1 1/2 cup rolled oats
- 1/3 cup almonds
- 1/4 cup pepitas
- 1/4 cup sunflower seeds
- 1 tbsp flaxseeds (linseeds)
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 cup maple syrup
- 1 tbsp olive oil
Instructions
- Preheat the oven to 175c fan bake and line a baking dish with baking paper
- In a medium sized bowl mix all of the ingredients together taking care to ensure that the oil and maple syrup has evenly coated the dry ingredients
- Spread out the mixture evenly onto the baking dish and bake for 4 minutes
- Remove the muesli from the oven, stir and turn the mixture then replace the tray into the oven and bake for another 4 minutes, checking to make sure the mixture does not burn
- When golden brown remove from the oven and set aside to cool before serving.
Notes
Once cooled store in an airtight container for several weeks.
